What does teeth cleaning in the dental office do that brushing and flossing does not?

Teeth cleaning in the dental office is typically performed by a dental hygienist, someone who has gone through college-level training to learn his or her trade.  They specialize in removing bacteria-filled debris from the teeth that brushing and flossing does not.  Two types of debris are not removed by brushing and flossing:  debris that has calcified, or hardened, onto the teeth (calculus, sometimes commonly called tartar), and debris that is too deep under the gum line (in the gum pocket) for brush or floss to reach.
